These cupcakes are perfect for making with/for your friends or your boyfriend/girlfriend for valentines day. They're cute and delicious, what more can you want from a valentines treat eh?
Ingredients
Cupcake/muffin tin
Cupcake cases
Cakes
200g self raising flour
200g softened unsalted butter
200g caster sugar
4 eggs
Buttercream
200 g dark chocolate
200g softened unsalted butter
400g icing sugar
Chocolate chips (as many as you want)
Method
- Pre heat oven to 190C, gas 5.
- Beat butter in a large bowl until softened.
- Add the sugar, flour and eggs and whisk until smooth.
- Split mixture evenly into cupcake cases in the muffin tin.
- Put the muffin tin in the oven for 15-20 mins or until golden brown.
- Now start to make the buttercream whilst the cakes are in the oven. Break the chocolate into pieces and place in a glass bowl and place the bowl over another glass bowl of boiling water. Make sure no water goes into the chocolate or it will harden and go crunchy and ruin.
- Beat the butter until soft and then gradually beat in the icing sugar.
- Then when the chocolate is cool to the touch fold the melted chocolate into the buttercream and mix well.
- Then mix in the chocolate chips.
- Remove the cupcakes from the oven and leave to cool.
- Spread the buttercream on the cakes once they are cool.
