Valentines Vanilla Cupcakes with Double Chocolate Chip Buttercream


These cupcakes are perfect for making with/for your friends or your boyfriend/girlfriend for valentines day. They're cute and delicious, what more can you want from a valentines treat eh?



Ingredients

Cupcake/muffin tin
Cupcake cases


Cakes

200g self raising flour
200g softened unsalted butter
200g caster sugar
4 eggs

Buttercream

200 g dark chocolate
200g softened unsalted butter
400g icing sugar
Chocolate chips (as many as you want)


Method

  1. Pre heat oven to 190C, gas 5.
  2. Beat butter in a large bowl until softened.
  3. Add the sugar, flour and eggs and whisk until smooth.
  4. Split mixture evenly into cupcake cases in the muffin tin.
  5. Put the muffin tin in the oven for 15-20 mins or until golden brown.
  6. Now start to make the buttercream whilst the cakes are in the oven. Break the chocolate into pieces and place in a glass bowl and place the bowl over another glass bowl of boiling water. Make sure no water goes into the chocolate or it will harden and go crunchy and ruin.
  7. Beat the butter until soft and then gradually beat in the icing sugar.
  8. Then when the chocolate is cool to the touch fold the melted chocolate into the buttercream and mix well.
  9. Then mix in the chocolate chips.
  10. Remove the cupcakes from the oven and leave to cool.
  11. Spread the buttercream on the cakes once they are cool.
